Breakfast for Dinner – YUM!
I don’t know what it is about breakfast for dinner, but it is one of those quick recipes that turns out to be a treat. Maybe it’s because you’re not expecting pancakes or eggs at six o’clock at night. I don’t know, but I this meal always brings a smile to my face. There are many faces of breakfast for dinner. I personally wouldn’t suggest throwing bowl of cheerios or a granola bar at your family for dinner, but for some, it may work. Baring that, just about any other breakfast will work. Below are a few ideas. I’m not going to insult your intelligence with recipes for these dishes. This is just meant to serve as a reminder that you can plan to feed your family with these treats. Breakfast is not just for breakfast anymore. Bacon and eggs – Actually, when we do this, it’s sausage and eggs and we like to throw some hash browns at it too. Takes about 30 minutes to make. Pancakes and Bacon – The above hash brown comment can apply and this meal is an easy one to make your own by adding fruits, nuts … to your cakes. You can whip out this meal in about 20 minutes. Oatmeal – Really! We do this occasionally. It’s not an all-the-time thing (that would probably bring some unhappy spouses), but it works on those nights when we’re in a hurry and it goes down nicely on a cold winter night! It takes about 15 – 20 minutes to put together, less if you use instant. There are many others out there; Waffles, scrambled eggs (w/meat of your choice mixed in)… Come up with your own ideas and put them sparingly on the menu on nights you know are going to be busy.
